While there does seem to be some debate as to the mineral content of bone broth, there is certainly overwhelming consensus regarding the abundance of gelatin. Gelatin, derived from the collagen in the bones, joints, and connective tissue of healthy animals, has long been valued for its ability to build and maintain strong bones, support healthy skin and hair, support the immune system and digestive tract and reduce inflammation. Current research supports these age old beliefs, especially regarding a healthy gut and digestive tract and the many issues that arise from inflammation.
Why The Simmering Bone needs a kickstart:
I am raising funds to expose Burlington, Vermont to the fabulousness of bone broth. I have been accepted into Burlington's Winter Farmers' Market and have all but the funds lined up to get there. The money I raise will be spent paying for ingredients (always organic and as local as possible), market fees, licensing fees, insurance, and the kitchen time to make the actual product. The profits made at market will be reinvested into the company so that I can reach beyond Burlington and deliver broth straight to the doorstep of those interested, anywhere in the US. "Simmer" has high hopes of expanding into a line of deliciously nutritious broth based baby food. Any money raised beyond my goal will go towards this endeavor.
While I have long paid attention to the nutrition behind the food I choose to eat, when it came time to serve solids to my firstborn son this took on a whole new meaning for me. Making sure his body was getting what it needed for optimal growth and development became my mission. What I learned impacted me so deeply I decided to step away from a career I loved to pursue my newfound dream of providing access to real nutrition for busy families trying to raise healthy children.
Uses for bone broth:
Broth can be enjoyed straight out of a mug just like coffee or tea. It makes a great base for soups and stews and can be used in place of water for cooking grains and vegetables.
Risks and challenges
My number one challenge is my commitment to maintaining a plastic free process at every phase of production. Shipping will surely be the biggest hurdle to overcome in this regard, but I will not give up on this goal.
Another challenge will be carrying this company into phase two - my ultimate goal and reason for starting this project: a broth based baby food line. Baby food is one of the most regulated products on the market, and rightfully so! Maintaining my non-negotiable high standards for both product and process will prove an incredible, albeit welcome, challenge!
