In PDX, we love our locally made street food BUT between the rain (which usually doesn't really bother us unless we are trying to keep our favorite gyro or burger from getting soggy), real estate developers purchasing and shutting down food cart courts, and the soaring rent prices around the city, where are we going to be able to find it?

We've found a place, inside and out of the rain, in the heart of foodie district of Portland, Oregon that would allow us to facilitate a fully operational kitchen, counter-order, fast-casual, indoor dining experience for nearly 100 guests, patio seating for another 30-40 guests, where Pacific Northwest chefs and food makers can serve their food and their menu, their way, to as many customers as they can handle. 

We want to define 'Pacific Northwest Food' from as many perspectives as possible so we are opening our doors to the food truck & cart owners, private chefs, catering companies, pop-ups, and other local food vendors to cook and serve in our restaurant, one day at a time, in an effort to expand their operation to a storefront.

Our vision is to create a collaboration in our restaurant that allows etc... eatery and their vendors to market for each other on various social media sites & etc...'s main website (in progress), keep the etc... eatery Daily Menu rotating and interesting for our guests, create, cook, and eat some great PNW food, and make some money.

This location also has a small retail space to highlight PNW food vendors, local artists, and artisans where we want to immerse our guests and our partners in the PNW spirit of community & collaboration.

MONDAY-THURSDAY @ etc... eatery our guests will experience a rotating menu driven by local chefs providing their perspective on Pacific Northwest food with the same level of food quality and customer service experience you have come to expect from the etc... eatery team.

When our guests visit etc... eatery on the weekend (Friday-Sunday) they can experience a PNW culinary perspective hosted by our house etc... eatery Chef. This will provide customers who prefer a more reliable menu the chance to experience consistent offerings from week to week (with local and seasonal specials, of course). 

We are equally as excited to share our perspective on Pacific Northwest food as we are to explore the culinary adventures of other local chefs in our region and to facilitate a restaurant for them to share their visions with all types of Pacific Northwest family members.

Risks and challenges

We have watched real estate developers all over the city purchasing the land where our favorite food trucks are serving their food. What was quickly brought up to be Portland food culture, Food Cart/Truck courts are just as rapidly being torn right back down because vendors are left with no place to go or face sky high monthly space rental fees.

We are trying to build the perfect space for each of those vendors (and ourselves) to thrive by cooking, serving, and marketing delicious "street" food. Our plan is to create the same taste and feel as ordering from your favorite food truck or cart in a restaurant setting where that food cart chef has exposure to 10-20 times more customers per day.

Along with a solid business plan, we believe that this comes down to 3 basic concepts:

Location (we’ve got this locked down. We are currently scouting and making offers on properties in the most food-central district in Portland)

Marketing & Design (social media & storefront marketing plan is already in place, see above).

Equipment (providing any equipment that might be required to amplify our vendors’ PNW food perspectives)

We need help aquiring more equipment as we reach the tail end of our planning process. We believe that if we can secure the location in the foodie district and fill it with as many resources as possible, any of the street food vendors who are serving in our kitchen will not have to sacrifice the integrity of their process or their menu. We want to be prepared for anyone who wants to share their food with our Pacific Northwest family has the opportunity to do so and isn’t turned away because we cannot accommodate their menu.

We will also be in a constant state of change as we will be serving food from up to 4 different vendors throughout the week and we need to keep our customers informed. We need to finance the marketing resources online and on the street to tell the community about our mission and invite them to support the local “street food” community through this new venture. We need to create a custom online portal (or app) that tells the customers who is serving on what day of the week and allow them the chance to see the specific menu we are serving.

The additional money from this kickstarter will allow us to finish purchasing our equipment, manage and maintain our marketing plan, and finally open our doors to the food vendors who need a place to serve their food and the community who is anxious to have a place to eat it.

$30,000 will allow us to complete purchasing the remaining equipment for the storefront and offer a fully functional kitchen for all of our PNW food vendors.

$45,000 will allow us to complete our equipment purchasing as well as make the needed investments in our Farmer's Market and catering divisions in an effort to expand our perspective on street food. We also need resources to certify our kitchen by the ODA in order to offer vendors an environment where they can prepare their goods for purchase.

$60,000 would allow us to complete our equipment purchasing, expand our market and catering divisions and complete our small retail space where we can highlight the different PNW food makers and other local artists. This is our complete Pacific Northwest vision.
