Sticky Walnut was born in January 2011 in a little suburb of Chester called Hoole. To say the budget was small would be an understatement. We had to make the choice, for example, between new tables or an oven. We already knew that our philosophy, with regard to opening a restaurant, was to serve quality ingredients without the fuss. With that in mind, we sacked off the new tables. These are still our core values – good honest food served in an unpretentious environment, all run by a youthful team of committed professionals.
Since our opening we have gained a loyal following from both our local community and guests travelling from further afield. Along the way we have been very proud to have achieved the following accolades:
· Cheshire Best Small Restaurant - 2012 and again in 2013
· Best UK Restaurant Menu - Cateys 2013
· Voted 39th best restaurant at the National Restaurant Awards- 2014
· AA Restaurant of the Year 2014-2015, England
We were also honoured to be asked to design the menu for the banquet dinner, this year, for the prestigious hospitality industry awards 'The Cateys', held at the Grosvenor House Hotel in London in July.
We now want to expand and open a sister restaurant to Sticky, Burnt Truffle. Even when you are successful it is almost impossible to raise extra finance for such a project, in this day and age, in the traditional way – from banks. We approached the bank last year for short term funding for a refurb (which included our famous airship of an air con unit).
Whilst we were accepted for the loan it was not without a fight. We have now been looking at potential second sites, and have found three potential locations, but in order to secure one we need the funds in place.
The bank and all their various forms make it such a painful lengthy process (pain level 8) that by the time a decision is made by the bankers the lease on Sticky will have run out - even before Burnt Truffle sees the light of day.

Its not all about money, its about community and support. We know that not everyone can give cash and thats fine. You can still be as involved as everyone else by just getting the message out there....
Risks and challenges
Sites are really, really hard to find. We already have our eye on a few places but even when we have found "the one" and made a successful offer, the legal process can be quite lengthy. Without funds in place we risk losing the site once we confirm our interest.
Planning, licences, regulations can all throw up potential problems.
However, having been through this once before at least we will be more enlightened this time round.
