We use the same ingredients as the brewers in Belgium whenever possible. This includes the same grains, hops, and yeast strains. In addition, Sheldon was born in Hasselt, Belgium and raised bi-lingually. That ought to count for something.
We are building a nano-brewery with a single barrel mash tun and brew kettle, and 2 barrel fermenters. We feel that this small quantity allows us greater control of the process at this time, but is just large enough to meet demand we already have.
We like to say that we are a story-telling company that just so happens to produce very high quality beers in styles that would be instantly recognizable by Belgian beer enthusiasts. We feel strongly that building a small "Secret Army" of supporters tells a better story and is more in line with the type of stories that we share than a bank loan would. This is perhaps much more work, but we are as interested in the process as the outcome.
