 We've finally made it. See the bubbles in the bucket? That is the sign of happily fermenting cider. A big thanks to everyone who supported us along the way. After fermentation the cider will be fined (with vegan finings) to help the yeast settle out, then racked to another vessel for conditioning, after conditioning it is racked again, into the brite tank where it is carbonated, then transferred into bottles or kegs. Kegs from local company Stout Tanks and Kettles are currently being manufactured, and will be delivered in February. You can expect to see the first Cider Riot! ciders in on draught in March. The Cider Riot! Takes to the Streets Party has been confirmed for May 10th at Biddy McGraw's at 60th and NE Glisan. The McGillicuddys from Victoria, are headlining. You might recognize this Celtic punk band from Victoria, BC from their music in the Kickstarter video, or from Timbers Army shows in Portland and Vancouver, BC. More details will follow, but expect another band or two and perhaps even a parade.
