Happy fall- in cider terms that's harvest season. Pressing for Cider Riot's initial batches of Burncider and 1763 just wrapped last night. Two 12 hour days filled with the whir and hum of machinery, the sweet aroma of ripe apples picked a month ago, and sweated to increase their sugar content. My hands are stained brown from the tannins in the apples and I'm sore and tired, but happy that the juice has been pressed.
Unfortunately, largely due to the American government shutdown we don't yet have a federal permit to produce alcohol, so I had to send the juice to a deep freeze storage company until the feds see fit to issue the license (Our state license got approved yesterday). With any luck it will be within the month and all that hard earned juice can be fermented.
