Three best friends are on a mission for greatness: to open the first biscuit sandwich, platter, and spreads shoppe in DC! With your help and support, Ayeshah, Mo, and Jason can design, build, and operate the region's best biscuit shoppe.
Jason is our secret weapon... Ok, maybe not so secret (http://dc.eater.com/tags/jason-gehring). He is a Rammy-nominated Pastry Chef of the Year (http://www.ramw.org/news/2014-rammy-awards-finalists-announced) who has excelled in the DC culinary scene for years. As opening Chef for Astro Doughnuts & Fried Chicken, he brings a wealth of experience in pastry+savory and fresh casual restaurant operations. You can find him covered in tattoos and flour on any given day.
Meet Mo - also known as "our super taster". We at Mason Dixie believe that a picture is worth a thousand words - so we hope these photos give you a good idea of what we are working with! Our biscuit shoppe will feature anything from our signature chicken biscuit sandwich, to our Benton's bacon fried egg and cheese biscuit, to seasonal specials, like our lobster Newburg biscuit bowl and rosemary biscuit with grilled figs, goat cheese and honey.
We will also feature biscuit platters: two biscuits with your choice of sausage gravy, "chicken pot pie" gravy, or chocolate "gravy." For those interested in a quick to-go snack, you can try one of our biscuit and spread combos: get two biscuits with your choice of a "butter" and artisanal jam. Try our "cracklin" butter with orange marmalade or our bacon jam with apple butter.

Your support allows us to bring these amazing, delicious, home-style, affordable, slow on the go, biscuits to the DC market that is void of a biscuit shop, period. A Mason Dixie meal brings the neighborhood together by providing a wholesome, home-cooked, Southern comfort food option to a community hungry for food that is familiar, affordable, portable, and downright tasty! No more franchisey chicken and cow gimmicks, nothing that is made with pink slime - instead, we are bringing a bit of nostalgia that reminds us of how iconic Southern cuisine is to our American way of life.

Mason Dixie isn't a project - it's our future. All of us have dreamed of owning our own restaurant for years - and we have finally found the right concept, the right time, the right community, and now the right venue to get the word out and hopefully get much-needed funding to open. Your contributions will allow us to pay for our 4-month pop-up residency at EatsPlace in Parkview! It will help us obtain our pop-up restaurant, basic equipment (fryer cart), and retail supplies (bags, utensils, etc.).
Our Goal: Bring Back Affordable Slow Food!
In today’s economy, the average American has to eat on the run or at their desk and does not always have time to enjoy a sit-down meal. We also understand that it is hard to “earn a buck,” and spend it on the right food! That is why it is important to us that we provide cost-conscious food without forgoing flavor, farm-fresh ingredients, or culinary creativity. Mason Dixie believes in serving the working American a home-cooked meal in a quick and casual setting. Biscuits are iconic staples of a family meal – they are passed around a table, a treat to which everyone looks forward. We want our food options to offer that touch of home and to trigger a sense of calm and the slow-pace of a family dinner, even on the go. Our goal is to become a neighborhood staple - a go-to for modern comfort food served with a side of Southern hospitality.

Risks and challenges
We feel very lucky. Restaurants are a risky business and many fail due to poor planning - but we have taken our time, really thought things through, and come up with a product and concept that people are already raving about. (NOTE: We got over 400 likes on Facebook in less than 48 hours - WITHOUT PR/Advertising and BEFORE people even tasted our biscuits!! Our fans ROCK!!)
Because of this demand, we have been approached by multiple entities - from realtors who want a brick and mortar, to food truck manufacturers, to franchisers - all of which greatly impact the business model we have been planning and budgeting for by increasing our cost to entry.
This Kickstarter funding will help us open a pop-up, but when our biscuits pass the taste test, there is a risk that demand will exceed capacity and we will need to ramp up quickly with a more permanent solution, which will involve more cash.
That is why we are sticking to our plan and proceeding with a pop-up. It will prove we have a viable product that is backed by demand, validate our choice in location, and help us tweak our operations model for a successful larger scale endeavor. The pop-up gives us the leverage we need to show a bank that we have a proven proof-of-concept and that we deserve a loan for a permanent shoppe.
