We don't want to get greedy, but we have added a "stretch goal" to our project. This is something which we did not need from day one, but have always planned to buy in about 6-12 months. A hog roaster! If we reach £15,500, we will be able to purchase this bad boy from the start. This will allow us to offer all sorts of outdoor events this summer, instead of waiting until next year. This will speed up progress and the expansion of the business, allowing us to cater for hog roasts and BBQ's of up to 200 people.

Our "Pig Day Out" will happen in Edinburgh in the summer, and will be a chance to put our hog roaster through it's porky paces. Come along and enjoy a roll with delicious roast pork, and give us your verdict on our new sides and sauces. If pork is being roasted in the summer, we feel like cider needs to be involved. This is a subject close to my heart, so this event will also be a chance for you to help choose the cider that we stock for 2015/16 parties and roasts. Have a taste of them all, and cast your vote!
We will also add a hog roast event reward, where for £1000, we will come to your venue and cater for your party with a whole roast hog for up to 100 people! Summer garden party? Wedding buffet? Just hungry?
The Edinburgh catering company is a new venture from the brains behind Russell Up. We have spent the last two and a half years in Edinburgh cooking for all sorts of private events. However we have now exceeded maximum capacity. We are taking all sorts of enquiries, and want to be able to deal with every one of them. We also want to push the business in new directions; producing new products to sell, holding specialised cooking lessons, and collaborating with other high quality Edinburgh brands.
We have already had some beautiful food photography done, and intend to get even more. We have a brand new website, almost ready to go, but need the shiny new kitchen to go along with it.
We have found a unit in Granton, just a few miles from the city centre. We want to gut it, and install a commercial kitchen. We are looking for help as, although we have raised a fair chunk of investment already, kitchens are expensive things! The unit needs to have a custom built extractor and stainless steel canopy installed. Then we will rip the carpet up and fit a new floor. Then will come ovens, fridges, freezers, dishwasher and stoves. If that is not enough, we will buy a host of pots, pans, trays, blenders, utensils: basically everything, including a kitchen sink.
Legal fees, planning applications, and building warrants are never going to be cheap or simple, but we feel like we are so close, and just need your help with this to push us over the edge.
The ethos will be exactly the same as it always has been: taking time and care to give everyone a bespoke menu to make their event truly special; No request is too much trouble. Then, as always, bending over backwards to source the best products, suppliers, and staff to make every event unforgettable. All at a totally fair price!
Bringing a project like this to life is not easy. We need your help. But in return we want to work with you. An Edinburgh chef wants a venue to host a pop up dinner? Someone needs some emergency kitchen space for something? We certainly know how it feels to be working on your own against the big boys, and want to give other independent Edinburgh businesses a leg up wherever possible.

Risks and challenges
It is no mean feat to find and secure a unit, work out what needs done, and do it, while simultaneously fulfilling all of the relevant health and safety/legal/and planning regulations. However we feel that we have researched all of these areas, and although there are lots of hoops to jump through, we feel like we have everything covered.
