If you had asked me four years ago whether I would or could ever be vegetarian (let alone vegan), ashamedly, I probably would have laughed in your face. After years of food obsession growing up and worshipping meat at every meal, I made some discoveries and changed my perception on what I was putting in to my body. People make these kinds of decisions for a tonne of different reasons, but for me personally, if you can save lives, help reduce the severe damage to the planet and explore a whole new world of exciting food, it's a no-brainer! Eating a healthy plant-based diet also comes with a wide range of health benefits, such as; lower cholesterol, improved blood sugar levels, lower rates of cancer, and a big draw for a lot of people, weight loss. I personally have never felt better!

The seed for this project was planted when I adopted a plant-based diet a few years ago; I won't lie, my new lifestyle choice seemed daunting. I was faced with a whole new world of food and what seemed at the time, alien, expensive ingredients with overblown recipes, annoying stereotypes and mountains of questions (I'm sure any vegan readers can relate!).

There were plenty of recipes out there, sure, some really impressive ones. But rarely did I come across one that was going to help the transition to my diet any easier. Every time I opened a cookbook or visited a cooking blog, there they were, the main offenders; tofu, chia seeds, medjool dates, tempeh, seitan... just to name a few. Now don't get me wrong, these ingredients are really fantastic and bloggers and cookbook writers are doing some amazing things for the food world! But at the time, I felt intimidated by that they were producing.

As time went on, I became more confident in the kitchen again; I had changed my perception from what I couldn't eat, to what I could eat. I was making dishes that weren't dissimilar to what I was eating before, only more exciting, experimental and of course, far healthier! I realised my food didn't have to be complicated or cost me my salary, and this is what I wanted to share with other people.

This cookbook is everything I wanted and needed when I first adopted a plant-based diet, it's delightful, simple and humble. It's my labour of love; a whole year spent writing, designing and photographing every single recipe, shopping for groceries and spending entire weekends up in my tiny kitchen cooking. The recipes reflect my passion for all types of cuisines, from Mexican to Thai, Italian to Japanese, it showcases everything I love about the world of food. 

The dishes you'll find in here suit all types of people; solo diners, couples, families and big groups, just adapt the ingredients to suit you! Most of the recipes will feed between 2 - 4 people as standard, and take under an hour to make. Simple!

You won't find any tofu, chia seeds, tempeh or seitan here; no overnight marinating and no surprises (except pleasant ones!). What you will find are dishes from around the world, recreated favourites you know and love, and definitely something new! Whether you eat meat, fancy trying something new, feel like you could do with more vegetables in your life or just like experimenting with food, this cookbook isn't just for vegans; it's for everyone, everywhere. I hope it will show you how fulfilling and nourishing a plant-based diet can be!

The cookbook has been carefully designed by me to suit the way we cook in the kitchen. I don't know about you guys, but if a recipe doesn't have a photograph, unfortunately I tend to skip straight past it!

This is something I thought was hugely important; it's exciting when you can see the finished product and know what you're working towards. By having a photograph for every single recipe, you know exactly what it is you're making and how it can be served. The text is an easy to read 9pt, meaning you don't have to squint or get too close to read it.

The book is made up of 8 sections, spanning 175 pages, full to the brim with delicious recipes; I guarantee there's something for everyone!

While printing a book is never the most eco-friendly process, I have made every effort to insure it has as little environmental impact as possible. It is going to be printed on FSC certified paper by a printer who ensures ethical and sustainable printing practises.

This may seem like a lot of money, but essentially it just covers costs for the print run of 700 copies. Plus warehousing, shipping, Kickstarter fees and the custom built packaging for the book (as it's a custom size).

Where’s the money going? Largely to printing costs, book materials and to recoup what I’ve spent on ingredients for recipe testing, as well as man hours spent working on the project. I’m hoping to break even with this funding goal, with the potential to raise slightly more. If this happens, I would love to invest in making more cookbooks…

The dream is to start a plant-based adventure and create a cookbook for each country I visit. A lot of people fear that adopting a plant-based diet means they can’t travel as easily, or have to cheat and make allowances whilst abroad. Travelling and being vegan can be incredibly easy, you just have to know what to look for. I would absolutely love to produce cookbooks from around the world, not only to show you how easy being vegan and travelling can be, but also to bring you fantastic recipes from far flung places. For me this would involve getting to know local people, learning their techniques, cooking with them, discovering new ingredients and developing recipes that suit the Delightful. Simple. Humble. ethos. Funds from this project would be very useful for setting myself up to work on the road, so I can pursue my dream and also work as a freelance graphic designer on the side.

Risks and challenges

As a graphic designer, I’ve taken on the entirety of this project myself, ensuring attention to detail and all style elements are consistent. However; being the sole member of this project has been challenging with certain things such as time constraints, meaning everything has taken a lot of time to develop.

This also means that the fulfilment falls to me. I will be doing everything I can to ensure all backers receive their rewards when stated, and I will keep you all posted every step of the way if any issues do arise.
