Vegan Chef Brandon Byxbe once struggled to find a veggie burger that didn't taste like cardboard and contain enough chemicals to make a Monsanto executive sneeze. Taking matters into his own hands, he decided to play mad scientist with all the freebies he was getting from the farmers markets where he worked and developed the Amazing Kale Burger!
After a brief but successful run selling the Amazing Kale Burger at a seasonal cafe, Brandon teamed up with a friend and fellow vegan chef to sell the burgers at the very farmers markets from which their ingredients originated!
The delicious, healthy monster Brandon created has outgrown its shared kitchen space and demands more room! The Amazing Kale Burger's new home already has the paint, the tile, and a good amount of equipment. All Brandon needs is...
- 40 gallon steam kettle
- commercial convection oven
The game plan is get the lunch counter open using equipment already owned and to upgrade as soon as possible to keep up with demand. The Amazing Kale Burger is now sold in 4 natural food stores, and on the menu at 5 restaurants and counting!
The market for healthy, quick and easy foods is rapidly expanding and growing. People are starting to care more and more about what type of food they put in their bodies... and the Amazing Kale Burger fits the bill! The burger is vegan, gluten-free, soy-free, nut-free, made almost entirely of vegetables and full of love!
Risks and challenges
Without these upgrades and more space, the Amazing Kale Burger will not be able to keep up with demand. Also, a direct steam supply is needed for the kettle and it is the first time I have worked with this type of equipment. With my knowledge of kitchen setup and other types of equipment and support from other chefs in the community, I know this obstacle and any others can be overcome.Learn about accountability on Kickstarter
