About

Hi there! It's me, Nicole Hunn from Gluten Free on a Shoestring (with my very first cookbook, published in 2011).

I’ve been an ambassador for the gluten free lifestyle since March 2009, which I first started writing about over at my blog, Gluten Free On a Shoestring. I started the site on a lark right after I was laid off from my job as a lawyer in a big New York firm. Learning and growing together with the gluten free community was instantly an incredible experience. Since starting, it's grown into one of the highest visited sites on the internet for everything to do with gluten free cooking and baking.

I came to be an evangelist for gluten free living when my family (a husband, three kids, three dogs and two cats) first learned that my son, Jonathan, has Celiac disease. At first, I cooked separate meals for Jonathan, but I worried that my son felt alone and like an outsider during our meals together. Supporting him, for me, quickly became more than dealing with the physical aspects of his condition. I needed to make sure he knew that there was nothing wrong with who he was—and that his food should be at least as good, if not better, than anyone else's. I decided to take the whole family down the gluten free path. Thankfully, my entire family was 100% in to try!  Even our dogs were down, and eat a grain-free diet. :)

Cue my extreme, overwhelming frustration! Suddenly learning how to feed everyone gluten free on a day-to-day basis became a daunting task. It didn't help that most of the recipes I found at the time were really fussy, with a million different, unfamiliar ingredients.  Whatever happened to the 'all-purpose' in all-purpose flour?!

Determined, I started developing my own recipes. One thing led to another, and within about 8 years, I had launched one of the highest ranking websites dedicated to gluten free living, published five gluten free cookbooks with a traditional publisher, and was showcasing my know-how on publications like TODAY.com. 

My greatest joy in all of this has been connecting with the hundreds of thousands of people throughout the world who have embraced gluten free diets. Though the reasons for folks going gluten free vary, one fact remains. All of us in this amazing community are dedicated to helping each other out and learning how to be our best through gluten free living.

Now that I'm firmly established in the blogging and publishing worlds, I want to connect with this amazing audience (you!) even further by producing an ongoing digital video series for both newcomers and old hands alike, teaching all the tricks I've learned over the years. I want everyone to share my enthusiasm for gluten free living, and learn as I have that if something is "good, for gluten free," it's just not good enough.

We want to produce a series of ongoing learning videos, each focused on a specific gluten free recipe.  The biggest ask I get from the community is always "How can I learn more?" and "Why is this or that step in a recipe necessary?". With this video series, I can finally dive deep into the 'why' and not just the 'how' for everything I do. 

We'll produce one new video a week for three months if we meet our main goal ($35,000). We'll extend that to six months if we reach our stretch goal ($66,000).

Fortunately, we don't have to leave anything to the imagination! The team needed to produce this amazing content is already in place. In fact, here's the first introductory episode for the series for your viewing pleasure!

Breakdown of costs

The money we're raising amounts to about $2500 per video for the series, or $10,000 a month, plus a little extra to cover all of Kickstarter’s fees and those of the credit card processing companies. This $10,000 covers all the operating costs involved, some including ingredients, camera equipment, lighting, transportation, editing and other standard production costs. 

If we reach our goal, we will begin rolling out the videos at the beginning of September 2018! One video will be released each week, usually Sunday morning, for either three months (the main goal) or six months (the stretch goal).  My hope is that this is the start of this ongoing series, and we'll be able to continue it as a regular part of your learning experience moving forward.  

This Kickstarter project enables us to bring these videos out to the world. Having them (and having you watch and share them) opens new ways for us to keep them going for years to come. Who knows what can happen after that. But we really need your support to help us make that a reality, by launching them now for all to see. We can't wait to show the world how gluten free is done, and we really can't do it without you!

I've been making gluten free everything since 2009. With this brand new video series, I get to show you the techniques I've perfected over the years for my family and invite you to cook with me in my kitchen. I can't wait for us to get started!

Risks and challenges

Other than one of us getting hit by a bus, there are no real risks or challenges involved in the project. My partners in the project (Michael Galvan and Scott Norvell) have decades of media experience between them. They have (and continue to) produce content for all the major media networks, including NBC, FOX, ABC, CNN as well as countless digital publishers. Michael also focuses in the food video content space and firmly believes in the passion and commitment behind our mission in sharing knowledge and growing together. We have already produced one episode on spec to show you how we would approach this series.

The only remaining question is the duration of the initial launch. Will it be three months or six months? And that's up to you!
