I love hot spicy food but I just can’t find commercial hot sauces that I enjoy, so to solve this problem I decided to create my own. Rather than creating yet another vinegar-based concoction or one of those flavorless sauces whose only claim to greatness is their searing heat, I have taken hot sauces in a new direction.
My philosophy is simple - hot sauces should be hot, but the heat should be matched by the flavor, the sauces should be made with the freshest locally sourced ingredients possible, and the sauces should be all natural. Following these principles I have created sauces which tantalize the palate with depth of flavor while still delivering a good hearty kick - sauces which compliment a wide variety of foods - sauces that balance flavor and fire.
These are Brooklyn sauces made in true Brooklyn style: intense and fun!

Your going to love Salamander Sauces. From top food bloggers to well known New York restauranteurs, people who try the sauce LOVE IT! In fact that's why we need your help. We can't tell you how many times people have tried the sauces and said "If you were to bottle and sell this, Salamander Sauces, could be one of the top selling hot sauces. I've never tasted a sauce like this"
I started by researching recipes and then formulated my own. After several attempts I felt I was getting close so I brought my sauce to the highly respected Brooklyn, NY restaurant where I work. My co-workers loved the sauce, but it still wasn't there in my opinion. Several more attempts were made before I was truly excited about it. Everyone that tasted it told me to bottle it and sell it, so I looked into it. Not knowing what I know now I decided to give up.
Literally the next day I discovered that I wasn't getting off that easily. On my way to work a friend stopped me to say that he was opening a restaurant and he wanted my sauce in there. All I could say was OK. Then, at work, the head chef approached me and gave me the information I needed to make this a possibility!
The sauce was there for the opening of my friend’s restaurant and people loved it. They are clamoring to buy it. Soon word was spreading about both the restaurant and my sauce, so we decided to do a tasting. I made five sauces for the event.
Before we knew it the kitchen was swamped and soon ran out of food, but the people kept coming. We bought some chips and kept serving the sauces.
This was the beginning of the Salamander Sauce Company!
It's happened to all of us - you get to the restaurant - you want something that just accents the food you're eating - and there's just nothing you can use. A regular hot sauce stakes it reputation on trying to sunburn your tongue. A dressing's got no kick. A little jam just doesn't jive. There has to be something better!
I felt just like you - I was sitting in front of a great plate of fresh BBQ chicken with nothing but some vinegary watered down tabasco sauce and I just couldn't do it. What I needed is what Salamander Sauce provides - that kick, but that smooth blend of delicious flavors that makes a dish stand apart.
Original: Origins. The foundation. We wanted to make a hot sauce that was seriously hot but also a serious sauce. So we took red bell pepper, habanero and jalapeno, and blended in carrot, garlic, ginger and cilantro. Smoky and intense, but also herbaceous, our original hot sauce brings extra fire to any food, but never burns.
Suggested Uses: Add it to soups, chowders and stews (that's a New England clam chowder in the video). Try it as a dipping sauce with chicken, beef or my favorite, smoked pork. Mix it with ranch dressing and use it in a wrap with chicken, cheese and greens. Make a spicy Bloody Mary or Bloody Maria. Shred some cabbage add lemon juice, a little mayo, salt, pepper and Salamander Original for a spicy slaw. Throw some on a steak and toss it on the grill, just be aware, grilling seems to tame the heat.
Tropical: The tropics are home to bright, sweet fruits and intense, sultry heat. This sauce captures both, with pineapple, papaya, mango and kiwi bouncing around the spice of habanero chilies and fresh jalapeno. Memorable but mellow, with fresh citrus and garlic for balance, it dances gracefully between refreshing and spicy.
Suggested Uses: Use it on pork, chicken, steak and seafood. Tropical makes a great marinade, just put a nice coating on the meat, toss it in the fridge for a couple of hours then let the flames of the grill caress it. Use it as a dip for fried fish, put a drop or two on fresh oysters and clams. Tropical Margaritas with a kick anyone? How about Pina Coladas?
Strawberry: Sometimes sweetness is just a mask. The smell of ripe strawberries gives way to fiery habaneros that bite like no berry ever could. But then the cool, refreshing taste of fresh orange lingers on your tongue after the heat subsides, and the temptation of another sweet spoonful rises.
Suggested Uses: This sauce is the real surprise! A friend marinates his pork chops with a little strawberry sauce for an hour or so then pan sears it and finishes it in the oven with a little more sauce. Put a drop on your fresh oysters. I love to dip my lobster salad slider in it and it goes really well with smoked pork and chicken too! Mix some with a little olive oil and champagne vinegar to make a great strawberry vinaigrette for your salad. What about after dinner? Try it over vanilla ice cream, cheesecake, sorbets or even warm apple pie with a scoop of vanilla ice cream. How about a drop with a nice stinky cheese and crackers? Great for cocktails too, add a kick to your daiquiri, make a strawberry margarita.
No lie, I gave a scoop of vanilla ice cream with strawberry hot sauce to someone at a cookout last summer, she loved it so much she asked me if she could design my logo for a bottle of it.
We are in the home stretch! We learned a lot about marketing and reaching out and finding *YOU* - our fans and supporters over the past several months. We've lined up our producers and packers. We've gotten fantastic response from the hot sauce community and from our ardent supporters. We are ready to craft for you the best sauces in the world - rocking your world with incredible flavors and heat!
We need to:
- Fund the first round of production of three sauces.
- Purchase insurance.
- Purchase our own UPC codes.
- Purchase several small pieces of equipment needed by the kitchen to produce these unique sauces.
- Produce the first run of labels.
I have many stretch goals and rewards in mind for exceeding our goal starting at $1000 over our base goal. But more to the point - you're a part of this story - we want to know what you want and if you come up with a great idea - we are here to make it real!

Risks and challenges
The main challenge at the start is working with the co-packer to have these sauces produced to spec. We will thus start with a small test batch of each sauce.
After the numerous times that I have made these sauces, with a few botched batches mixed in, I’m confident that I have the ability to steer them in the right direction. That being said, this is a talented crew and I really don't see them taking long to pick up the subtleties of creating my sauces.
In regards to other potential problems, to avoid delays down the line all of the sauces have already been approved for production and the co-packer knows what to expect. I have already begun working with the label printer to avoid delays as well. In addition, I have also been working with a small company for t-shirts and hats; the stitching is down and the first shirts just arrived!Learn about accountability on Kickstarter
