Update #4: The State of WP Address: We're Opening Soon!!!
Hello Everyone!
We are making lots of progress and everything is moving right along! In the past few months since this all got started we have picked up tons of new sources for cheeses, new sources for pastured meats (including pork, lamb, and 100% grass fed beef), as well as new sources for lots of organic heirloom grains! Despite having had a few hiccups and a couple snags with the build out that have delayed us along the way, we continue to push forward! All the while, normal WP business is on a continuous increase with more and more restaurants and markets here, as well as around the state, looking to us for sourcing exceptional local foods grown or raised responsibly, sustainably, and often certified organic.
Since our last update, with the many accomplishments in progress, we have had a few let downs during the build out. One major hold up was due to a limited amount of available power in our space, which took city inspectors and Duquesne Light 8 weeks to decide what they would allow us to do to bring in more power. The power issue has been resolved and we now have more than enough available power for our current plan and enough extra power to implement future plans without major changes to the existing infrastructure. In the meantime many good things have come about in the way of new farms with exceptional foods for everyone to enjoy, lots of highly qualified individuals to work in the store (and on other WP projects), as well as a truly awesome one of a kind counter: a solid oak slab counter crafted by a local artist from salvaged wood sourced from a tree that fell in Homewood Cemetery in Squirrel Hill. Back in the day this tree surely supported fungal life, and probably a few good edibles such as Chanterelles, Honey Mushroom, and likely Hen of the Woods. It’s pretty cool that our counter will make a full circle of life for all of us to enjoy – supporting the life of mushrooms in its life in the ground, and facilitating the preparation and consumption of choice mushrooms and many other exceptional foods in its afterlife in our storefront for years and years to come.

Moving along we have lots of things coming together very quickly and anticipate opening sometime in the next month. Within the next few weeks everything will finally be in place, and then all we'll need will be a few days to stock and get situated.
We hope you haven’t become frustrated with the delay, though we can’t blame you if you have; it’s been really frustrating for us at times. We have remained and are still super excited to be open very soon!! We know that once you make it through the door and see not only what we have done with the space, but all of the exceptional local, clean, sustainable, and delicious foods (and I could go on and on with examples), you’ll walk out happy and joyous about what you’re about to take home and eat, and ever excited about the new foods you’ll find every time you return for more!
Thank you again for your generous support, your patients, and your interest and continued support of local sustainable foods and the farmers that grow and/or raise them, the food artisans that craft them into delicious products, and the people that make them available to the community at large. We are in the final stretch and we have made it above and beyond our goal!!
We are so grateful for all of the support and honored to be able to make all of Pennsylvania's wonderful sustainable foods more accessible to everyone! Thank you!!!
...and still, We have one more week to go! Another whole week to raise more funds! 7 more days to get more people involved!
If we can make it to 150% we can grow enough salad greens in-house to have pounds of nutrient dense, freshly picked succulent baby and micro salad greens, as well as delicious, crisp, healthy sprouts harvested fresh everyday!
This is completely viable and part of our long term plan, but we have the opportunity to get it going sooner with more peoples support.
We have 3, yes 3, 700 square foot separate basements to work with! The basements are already clean and in perfect condition to grow greens and sprouts under efficiency grow lights. Producing these delicious salad greens on site will allow us to offer them at an affordable price and harvesting daily... you can't beet the freshness, not to mention all of us doing our part to cut our carbon footprint by eliminating transportation!

Please continue to spread the word to anyone that you know that might be interested in what we are doing. We are almost there!!!!! Any funds that we receive on top of our goal is only going to improve the amount of foods we will be able to offer!
Tom and I are now laying plans to grow micro greens, baby greens, and sprouts on site! Help us continue to raise funds and year round house-grown greens can be a reality as well!!
