Love the concept, love butter, love public art, particularly when actually creating something. Congratulations on achieving your funding goal, as well.
But 'after an hour' of pedalling? I can make it in fifteen minutes in an (empty & cleaned) Cheez-Whiz jar with a couple of tin-foil-wrapped marbles and some heavy cream! Not as tech-heavy or fun to watch, I grant you, but it does work the arm muscles effectively.... I'd guess that you could CUT that time with the intensity you could generate via leg muscles, not quadruple it.....
Anyhow, just keep checking those paddles, have some salt handy, and some fresh water to rinse your butter in!
