Chicago Johnny's Giardiniera set out to "Enhance the traditional Chicago condiment with bold, earthy, and natural flavors."
Project Overview
This project is simply the launch of Chicago Johnny's. These funds and your support will give us our first batch of Chicago Johnny's Signature Giardiniera. For your efforts and support you will be rewarded with some of our giardineria for your next Italian Sausage, Pizza Pie, Italian Beef Sandwich, Toasted Cold Cut Sandwich, or any other food that needs that extra spice and smoky flavor.
Chicago Johnny's Signature Giardiniera
I began making my own giardiniera when I started my own garden a few years back. I had some left over peppers, cauliflower, and whatnot. I was out of giardiniera in the cabinet so I made my own. It was f*^#^!# amazing.
More recently, I have started to cut out preservatives, food coloring, pesticides, and chemicals in all of my foods. While looking around for giardiniera without preservatives or chemical enhancement flavorings, I couldn't. So I am creating Chicago Johnny's with the goal that in the future we will have our own gardens to supply all of the crop for our giardiniera. Farms where I know pesticides, fertilizers, and chemicals never came in contact with our crops. In this fashion we will be able to keep our product: Pesticide Free, Chemical Free, Preservative Free, and without Genetic Modifications.
What's Special About Chicago Johnny's?
Other than the obvious Bold, Earthy, and Rich flavor palette we take pride in our creation. Chicago Johnny's has:
- No Preservatives
- No Chemical Processing
- No Mechanical Processing
- Local United States Grown Produce
- Hand Crafted And Hand Cut Ingredients
Chemical Free Goal
In my search for produce I have found that I can get all of the ingredients I need grown locally within the United States, and some even organic. However, no place that I have contacted grows serrano peppers (nor other hot peppers) organic. Therefore, the first two years of Chicago Johnny's launching will be accompanied by finding land for growing our own crops free of GMO's, pesticides, fertilizers, and other chemical toxins. This is one of the goals of Chicago Johnny's and slated to be completed in the 2016 cycle.

I got a few questions about that. If this project completes funding I will set up a day to meet with everyone that wants to pick it up and bypass the shipping costs. The money that would have went into shipping will go into another jar of the giardiniera. Thanks for asking!

A few of you have inquired about shelf life. I can tell you that I have tested it up to 6 months. Until I get further research, I only suggest 6 months in a pantry or closet. Once you open it up and refrigerate it I imagine it would last a bit longer. I still have one jar in the fridge that I opened 8 weeks ago and test it now and again and it is still good (it was in the pantry for only 2 months prior to opening).
In short, I wouldn't go past six months until I can do some more research.
