To our dear Kickstarter supporters,
Kyle and I cannot express how grateful we are for your very early support of Hopscotch. As of Sunday, we are officially one month in to operating. We can honestly say that we are extremely satisfied by what we have accomplished thus far. We feel that the food, drinks and service are on par with our own very high expectations. We are excited by the fact that we have already engaged multiple regulars, some who have visited on 4+ occasions.
For those of you who have not yet been in, I will unabashedly exclaim that the food Kyle is doing is exceptional and just keeps getting better. Our cocktail list has been a hit, accomplishing the goal of being innovative, yet approachable. Though small, our bar is state of the art. We have an excellent selection of small batch, local, artisanal and house made spirits and ingredients. We have the best ice machine, manufacturing perfect cubes, in addition to an awesome japanese beer tap -- earning us some major street cred in the "industry." This bar, in it's entirety, would not have been possible without your very generous support. Your support also helped us hire and train an excellent staff and granted us the ability to open with the inventory necessary to get through our first days.
I was asked the other day, "what has been your biggest surprise so far?" Having taken a bit of time to reflect, I think it is just how enthusiastic people are about what we are doing here. It's not just a "thanks for a good meal" sentiment. We have been embraced by a community, one that is supportive and excited, not just about a positive business opening in the neighborhood, but because we have created something that is a point of pride. There is no group of people with whom I would rather share this very real sense of accomplishment than all of you who believed in Hopscotch before ever seeing or experiencing it.
