Happy Christmas!
17 days, 592 bags of tea weighed, packed and stamped, 296 boxes assembled, packed, addressed and sealed and 13 mammoth trips to the post office...but the task is at last complete! I am hoping that by now many of you will have received yours (apologies if it looks like a 3 year old wrapped it, there were a lot of late nights and angry battles with packing tape) Thank you to everyone who has tweeted pics to let me know they have arrived safely, keep them coming. I worry that many of you may have had one of those annoying cards through your letterbox telling you to go to the Post Office and collect, which is probably the last thing you want to be doing at this particular moment, but unfortunately there was no way around it!
Anyway, just to say that if you have got your tea, I hope you will like it. All I ask is that you don't be intimidated by the loose-leaf and put it to the back of your cupboard for another moment - although the teas are special, they are to be enjoyed. I want them to be used, for the bag to sit by your kettle and be bashed around and crinkled from repeated folding up and folding down...
Neither should you be too scared of the brewing instructions - although they are of course important, they are there as a guide only and based on what I think brings out the best flavour in your cup. You might feel differently, which is fine. I don't expect you to do Heston-style brewing in your kitchen every morning trying to get a perfect 75 degrees for your Jade Tips - simply make sure you are cooling the water off. And for the amount of leaves, experiment. You may like it very strong, while someone else takes it weaker to be drunk without milk. All that matters is that you like it, so feel free to play around with amounts to your own taste...
All that remains is to say a huge thank you for making 2012 such a good one - I am raring to get going proper in January and you will all be the first to know where I will be...
