What better place than Portland, OR to start a radically different food establishment featuring items based on what our ancestors ate? We want to allow food lovers, especially those with dietary restrictions, to enjoy meticulously prepared, healthful cuisine in a convenient and quick manner.
What's Paleo?
The paleo diet is sometimes better described by what it isn't: no gluten, no dairy, no added sugar, no soy, no legumes, no processed food of any sort. Cultured Caveman will offer a unique change of pace from most carbohydrate-heavy food cart fare. We will serve healthful, nourishing, protein-rich entrees that are 100% gluten, soy, and dairy free.
Who We Are

The Location
We'll be located at the new Alberta15 food cart pod, located at 15th and Alberta in NE Portland. Currently in development and opening May 31st, Alberta15 will be a beautiful destination to come and stay a while, with covered seating, outdoor heaters, and restrooms.
The Food
Egg Frittata Muffins: savory cupcakes made with organic coconut flour and omega-3 eggs. Available in 2 flavors to start: Kale+Bacon+Shallot and Wild Mushroom+Red Pepper+Spinach (vegetarian).
Slow Roasted Beef Cheeks, Served in a Nori Hand Roll: locally-sourced grass-fed beef cheeks seasoned with ancho chili and natural cacao powder, served in a convenient, nutrient-rich cone of nori.
Paleo Fried Chicken Drumsticks: coated in a healthy "breading" made with almond flour, chipotle powder, and garlic. The perfect fried chicken alternative for those with gluten intolerance.
Wild Mushrooms in Bone Broth: rich, slow simmered broth full of omega-3's, protein, and collagen (wonderful for your skin).
Sweet & Russet Potato Fries: pressure-fried in organic grass-fed beef tallow, to a perfect crispiness.
Baked Kale Chips: better than popcorn! Made with avocado oil and fleur de sel.
Gluten and lactose-free treats like macadamia nuts, dark chocolate, natural protein shakes, coconut water, kombucha tea, yerba mate, and Stumptown coffee!
Why We Need You
We've already invested in a beautiful purple and green food cart, currently parked in Joe's driveway. But, it needs to be upgraded from a Class 3 to a Class 4 food cart. This involves buying and installing an all-new sink and dishwashing station.
Upgrade Food Cart: $1000
We need to buy additional cooking equipment including an oven, slow cookers, and a pressure fryer.
Cooking Equipment: $1000
In order to secure our place at 15th and Alberta, we need to pay first/last month's rent and utilities.
Rent/Utilities: $1500
Healthy, locally-sourced ingredients aren't cheap, but they are vital to our operation. We need grass-fed meat and tallow, local pastured eggs, and fresh vegetables. We also need paper goods to serve all these delicious things!
