Update 10.10.12: Salted Caramel Stout & Chocolate Pumpkin Porter
We had an amazing turnout to our free tasting at Bier:Thirty last night. We went through 15 gallons of our beers and met tons of great people. One of the most frequently requested beers is our Salted Caramel Stout, and we did not have any ready last night; however, we have an exciting update! (Backers, check out the updates, if you're not a backer then you'll need to pledge to see it!)
The Brewery and Philosophy
Cloud Nine Brewery's nanopub will be located in the heart of Boise, ID. The downtown corridor is a vibrant part of the Boise community and is committed to welcoming small businesses like ours.
At Cloud 9 we support local and American manufacturing wherever possible. We are committed to recycling, reusing, and reducing our carbon footprint. We will “Think Boise First” and contribute to the local economy.

Idaho is primed for beer production. Did you know Idaho ranks third in U.S. hop production accounting for about 8% of the U.S. and 2% of the world hop harvest [1]?

Cloud 9 Brewery is the expression of our
shared passion for beer. It is a little cliché and perhaps far-fetched
to think that our beer can make the world a better place, but, on a
nano-scale it will! By creating a product that is focused on seasonal
ingredients and sustainability, it is our hope that the beer we create
will support the community and local farmers, ranchers, as well as
expanding the variety of craft beer in Boise!

The beer we produce will be available in our nanopub, where we aim to provide a relaxing and casual beer-drinking experience. Fresh beer always tastes the best, and you can’t get any better than being at our brewery! Pints in the taproom, growlers to go, and small scale, local distribution is our way of ensuring our product is in its prime when it gets to your glass. We will have a number of staple beers on draught plus we will be providing a rotating line of seasonal and specialty brews. We love to rediscover ancient beer recipes as well as spend a lot of time developing a few unique styles brewed with herbs and spices.

Who is Behind Cloud 9 Brewery?
We're Maggie and Jake Lake of Cloud Nine Brewery. We both have deep family roots in Idaho. Boise is our home, and we are proud to be part of this community. We are starting Cloud 9 brewery because we are passionate about beer and we want to share this passion with Boise.

Maggie's culinary and management expertise with Jake's technical and scientific background makes a perfect pairing for creative, consistent, flavorful and well balanced beer. We will exemplify quality and freshness in our good eats and delicious cold brews.

Maggie and Jake have been brewing for years, and have steadily increased both batch size and equipment. We are currently working on a 10-gallon stainless steel system using pumps, a recirculation mash, and direct fire. Upgrading to a 4 barrel system is a straightforward evolution in our brewing cycle.
Maggie has built her own construction business from the ground up over the past 13 years. In addition to running her own construction business, she has also catered a number of large and small events for private clients and non-profit organizations. Maggie is a skilled chef with experience in pairing food with beverages as well as menu creation. She is skilled and creative in the kitchen, as well as influencing flavor combinations for the brewing.
Jake has worked in the IT field for over 10 years, designing, developing and maintaining web applications, databases and servers. His scientific background and his passion for beer, make for a flawless pairing. He enjoys crafting perfectly balanced and truly delicious beers for every palate.
What is Nano?
A nanobrewery is smaller than a microbrewery. Typical microbreweries work on a 7-10 barrel system. Our nanobrewery will be brewing on a 4 barrel system. We will brew enough beer to keep glasses full in our nanopub, and kegs for events or special gatherings. Rather than focusing on distribution to lots of bars, we can focus on creative brews and you can enjoy them in our pub.

What we need to reach our goals...
Our goal is to start with a 4 barrel brewhouse fabricated by a small Northwest based manufacturer. Our small system requires specialized stainless fermentors and manufacturing skills. We plan to source as much of the kitchen and other brewery equipment from existing businesses to get the most out of every dollar we spend while giving a home to existing equipment.
We’ve completed several rounds of fundraising, including an SBA loan, and are very close to completing our goals. The final piece is buying and installing our fermentors, which will take 3 months due to the production schedule of our fabricator. The sooner we can get this piece complete, the sooner we can open our doors and realize our dream of opening Cloud 9 Brewery.

Explain These Fermentors? Spelled with an ‘O’?
Yes, fermentors with an ‘o’. In brewing, a fermentor is where the fermentation happens, and a fermenter is the little guy that does the fermenting (the yeast)[2]. We thank you for visiting our Kickstarter, and we hope that you will help us with a contribution so we can get the fermentors we need for our sustainable nanopub. Right now, we are brewing on a 10 gallon system. We want to take our delicious brews from pico to nano! This Kickstarter is to acquire 6(six) 4.0 barrel cylindroconical stainless steel fermentors for our downtown Boise nanopub.

Contributions
One of the many challenges of opening a brewpub is generating the upfront capital required to open the doors. We have secured a substantial portion of the startup funding. Your Kickstarter pledges will go toward the purchase and installation of the fermentation equipment that we need to get the brewery up and running. We realize that $30,000 is a large sum and that the support of the larger community is crucial to reaching our goal. This final $30,000 is what is needed to get Cloud 9 beer into your glass.
