Good morning! (Good Day to those in the East),
Apologies to you good and generous backers - a couple of days have passed without an update. Things are somewhat busy at the moment and the opportunity to write did not present itself until now.
So, our master butcher, Christian Cleavers (I'm not kidding about the name - this man takes this work so seriously he changed his family name for it!), arrived on Wednesday. The name thing is interesting when you think how many people today have names like Miller, and Thatcher, and Potter, and Smith and Butcher. Perhaps Christian's at the vanguard of something else there too?
Anyway. Christian is at the vanguard of a revival of whole carcass butchery. Many of you may not know that most meat markets and "butcher shops" bring in boxes of certain cuts that are prepared elsewhere and only the final cuts and grinds are done in store. What Christian specializes in is what we at Boulton & Son are committed to doing - and that is using the whole carcass of every animal we bring into the store (and remember, we are bringing those carcasses from the local rogue valley farm gates where we buy them).
This means a number of different things for you the customer. The first is that it allows us to set our pricing in a manner that makes our meat as affordable as possible - as we cut the carcass very carefully, we have control over minimizing waste and improving efficiency. Better for you, better for us, and more respectful to the animal. The second is that we will not always have the same cuts available all of the time. We will have a weekly rhythm that reflects the reality of what we do. We will though, always have the capacity to cut to order and take special orders for the week ahead. If there's a cut you want, we can always supply it - but we may need notice.
So, as we speak, Christian is teaching Skyler how to break beef apart. We are receiving the finest deli meats and condiments for our shelves, and the final touches are being made to the store. There are a few things still to take care of before we can open the door - but we are very very close. Indeed, in the week ahead we WILL open for business...
We are over 50% toward our target, and have 60 hours left to go. It's time for the big hitters sitting on the side lines to make their play... We know you are out there!
