@Frederic is right UP milk is a no no. To start with, as you are practicing go for some homo milk, 3.25%, from a dairy or group of dairies nearby, and the freshest you can find.

So my first try at making Mozzarella was unsuccessful. It was working until I cut it and put it back on the heat (it had started to take by then). The curds just fell apart at that point. This was with organic unhomogenized milk from a local creamery (Limestone Organic Creamery). I suspect the problem is that the milk is ultra-pasteurized. I know organic milk is often ultra-pasteurized, but I was hoping that buying it local directly from the creamery would be different. I guess not. Anyone been successful in Ontario can recommend a brand of store bought milk that works and that is not ultra-pasteurized?

Hi Everyone,
I'm so sorry communications have recently been ignored. I have been all action tracking and packing shipping and have indeed been communicating slowly. At this time every outstanding kit needs a regimen of individual time and attention. We never expected almost 10% of kits not to get to their pledger; now it's of the upmost importance for us to get each outstanding kit to it's destination. You will each be getting our focus, but as we follow through with each pledge time ticks away for the next in line. This is no fault of yours, and we hope you will forgive us. I'm a transparent person normally but this project has "kick started" exceptional times.
One request that would really streamline things is if you do not put your query in a comment thread. You are more than welcome to leave feedback anywhere of course, but it would help if requests were easier to track and coming directly in to my inbox at hello@makecheese.ca or via a backer direct message.
Rest assured I know you are there, I have a list of names and kits, and I will not rest until you have your reward.

Still waiting for the Brie and soft cheese combination kit in Vancouver Canada, and still waiting for a response to my email query nearly two weeks ago. With all due respect for the difficulties of the robbery, building a small business, the frustrations of the postal service, etc, I think a response to emails is not too much to ask in return for the trust and financial support we contributed to the project. It's just good business and good manners. I don't mind waiting for the kits for months if more time is required for them to be prepared and shipped, but I do mind being ignored after being told we should expect our shipments over a month ago. There's two key ingredients to an awesome business: a great product and great customer service. You can build trust through proactive and transparent communication.

Update from my post 4 days ago... my 2 kits arrived here (Louisville, KY). They look to be in good shape. My concern about the contents spoiling was unfounded because, much to my surprise, they did not ship (according to the shipping label) until the 8th of this month (a week ago). Maybe I misunderstood because I thought even the double-kit rewards had shipped a month ago. Either way, well within the 2-week limit listed on the culture package. The kit looks great, btw. More items included than I was expecting. I hope this really takes off for you!

Would it be possible to get a pdf of the correct instructions for the mascarpone kit? I have a sinking feeling that I am about to dump out a gallon of specialty cream and high fat milk because the instructions are very wrong.
Is it 87˙F or C (I think C), it is 2 pinches of rennet in 1/4 cup, or 4 pinches, and finally, is it 1/4 tsp or 1/8 tsp of Calcuim Chloride.
I think like many people here, I am extremely disappointed.

Every morning when I wake up I check to see if my kits were delivered while I slept. One day my cheese-prince will come! I ordered 3 kits and live in central Illinois, so mine was probably one of the last to ship, though, so I'm being patient.

1 pkg of citric acid powder for 30 batches of cheese
1 pkg of cheese salt
1 recipe booklet & links for support
The cost of the items, packaging, shipping and handling is what you would pay for the items individually from us. Other kits have the different equipment and cultures needed to produce other cheeses.

First batch complete. Didn't come out too well, but that is my fault. Bought the wrong kind of milk and didn't add enough salt. Result was flavorless. However, the instructions were perfect and the cheese did indeed get made. Round two this weekend! Great kit. Thanks!

I'm honestly a bit disappointed with my kit. For $45 dollars ($15 extra for shipping, arrived with a shipping label that said $9 on it), the box contained ingredients which total about $6 in a few zip loc bags and a photocopied instruction sheet that seemed like a first draft. I'm in the process of making my first batch, so I can't comment on the quality, but I wish the presentation was nicer for the money we spent.

got my kit today and I felt like a kid in a candy story... I am so excited. You are my only kickstarter I have every pledged too.... I am a cheese lover and cant wait to make my own cheese.......... as I was walking from my mailbox to my office i started to feel "sand" on my hands... and then I open my box... ready to start making my cheese...... and an explosion of WHITE everywhere.. Both the bags had opened salt and Citric Acid. It was everywhere. .... :( What should I do?
