A business that grew from a gathering of friends, Pizza Tonight got its start as a monthly Pizza Club. The rules of Pizza Club were based loosely on Fight Club. Club members were expected to make a pizza their first time at the event and to not talk about gatherings, for fear that it would get out of hand. Well it did get out of hand but in a good way. What started with a few friends gathering to eat wood fired pizza ended up with like-minded food and drink enthusiasts sharing special ingredients, artisan wine and beer, desserts and know how.
The concept for Pizza Club was that, as the host, I would provide pizza doughs and sauces and come up with a theme for the night (pizza's based on fresh local ingredients or "your favorite pasta recipe" realized as a pizza.) Guests enjoyed sourcing the best ingredients and creating some amazing pizzas to share.
Pizza club went on for about 2 years until I got the idea to bring my Pizza Club concept to the farmer's market. I started taking business classes and looked into bringing the idea of bundled Pizza Kits to our local market. Dough and sauce were the perfect base to highlight all the amazing, fresh ingredients available from the other market vendors.
We started in November 2010 selling our Pizza Kits to local CSA's and getting involved in winter farmer's markets. At the same time we started looking into the possibility of getting a mobile wood fire pizza oven. In March of 2011, we brought our mobile oven home and launched Pizza Tonight, On-Site, catering everything from birthday parties to wedding dinners and vending at two weekly farmer's markets
People love pizza! We had great success at the markets and started getting more and more catering jobs. 2011 was a fantastic year for us, and we were motivated to keep growing, getting pizza to the people, and giving back to the community. We've shared our time and resources with several local organizations, like Tricycle Gardens, SCAN (Stop Child Abuse Now,) and Slow Foods Richmond.
Here are some of the intended uses for our Kickstarter fund:
Source more of our ingredients locally! We have been lucky to source so many of our ingredients locally, from Olli Salumeria to Dave and Dee's Mushrooms to Sausage Craft. This past market season, we connected with even more local businesses and farms, working beside them week after week, and we'd like to see them represented on our menus!
Expand the business locally and regionally. Our kits, dough, sauce, cheese, and meatballs have been received so well locally, we'd like to bring that to even more locations.
Replace and improve our equipment, including signage, tents, catering gear and oven tools. These items take a beating and wear out fast.
