My incredible passion for high-end coffee and raw ingredients combine to create the first mobile coffee bar that offers raw milk

Five years ago, I began my own personal quest to create an amazing coffee experience at home. I read books, I experimented and spent years developing a coffee craft. Now I'm ready to bring that experience to the streets of San Francisco and beyond. And I'm appealing to you to help me officially launch in January.

In a city that's littered with exceptional coffee experiences, I think there's more to bring coffee lovers and/or anyone seeking the highest-quality ingredients. Enter DRIP'D Coffee, the first truly mobile coffee bar that will use certified raw milk, in addition to the best local coffee, local organic [pasteurized] whole milk, organic pastries and cold brew bottled iced coffee.

DRIP'D Coffee's Mission

This isn't solely about profit, but truly for my personal love and drive to create a personal experience with each customer. DRIP'D will begin as a part-time passion project, operating primarily on weekends in San Francisco for the first year. I'm going to give up 99% of my free time to follow a dream of serving coffee to coffee-loving people, and hopefully make a great deal of new friends along the way.

I want DRIP'D to be completely mobile, to be flexible enough to offer instructional coffee classes (e.g., espresso making 101), with the ability to cater private events. The design of the cart will reflect a old-fashioned reclaimed wood style to create a unique experience unlike anything else outdoors.

The idea and passion is there. Help me bring it to reality!

I have a 32-page business plan and have worked out all the details on equipment and cost, will power the cart with direct [cleaner-burning] propane and battery power, using no gasoline or generators.

A Quick Word about Raw Dairy

Raw milk can be served in California (I've verified with the SF Health Department) from two certified raw dairies: Organic Pastures and Claravale. I personally love the taste of raw milk, but more than anything, I want to offer people the choice of milk with their coffee, something that's never been done in this type of setting.

I occasionally get asked if steaming raw milk does in fact pasteurize it. From the extensive research I've been able to do, the amount of time steaming milk for espresso (about 7-12 seconds) doesn't even come close to the total time and temperature required to pasteurize milk. So even steamed milk retains most of its living state. Regardless, certified raw milk dairies in CA are held to the strictest of quality standards, and the cows that produce milk at these dairies are the healthiest you will find. You can rest assured you're getting top quality milk. But if you're not into raw, that's fine too. We'll offer organic [pasteurized] milk, as well.

What We Need from You!

The company will start with the support of my wife Melissa, friends and family, but we don't have enough startup money to launch DRIP'D by January 2013. So we're appealing to you, the Kickstarter community, to help give us the push to make this dream a reality.  

Starting a mobile food facility in San Francisco is like opening a mini restaurant. There are extensive startup fees dealing with permits/health department fees ($3 - 5K), shared kitchen space, storage, equipment ($10K) and more.

FAQ

  • I'm not doing this to get in to a long debate about the potential health benefits of raw milk, so I'll keep it short. Being partially lactose intolerant, my personal experience with raw milk from certified California raw dairies has been eye-opening. Not only can I drink milk on a regular basis when it's raw, but the taste is just wonderful. I want to bring that to a retail coffee setting. 

    Like other raw foods, raw milk is a living food, and when it comes from healthy pastured-raised cows, it can be nutritionally beneficial. I'm not going to go in depth on it. There is plenty of research out there, so I'll leave that part to you.

    That said, I understand that it's not for everyone. And that's why I'm giving people the choice of milk with their coffee. To me, that's what it's really all about -- choice.

  • Not really, but that's a difficult question to answer without extensive research on low heating of milk.

    High-temp pasteurization heats milk at 161°F for 15-20 seconds, and ultra high-temp pasteurization heats milk to 275°F for at least 1 second. When I steam milk for espresso-based drinks, it doesn't come close to temps like this. I believe that much of what's living is still in tact.

    But if you disagree, that's fine too. I'll also offer cold raw milk and cream for drip coffee, iced coffees and other coffee drinks.

  • Yes. Full retail sale of raw dairy is legal in California. In a cafe setting, warning signs must be clearly posted at the point of ordering, and wording of the warnings must mirror the warning on the bottles, according to the San Francisco Public Health Department.
