
Honest Hand-made, hand-formed, boiled-and-baked bagels
The Idea
Create honest, hand-kneaded, hand-formed, boiled-and-baked bagels good enough to inspire fierce customer loyalty. Portland, and especially the Brooklyn Neighborhood in SE Portland, has a scarcity of good bagels, especially after some local bagel shops were recently sold to a conglomerate. I believe my bagels are what bagel aficionados and everyday morning commuters will love. For me, this is all about creating something so good that people pay for it, and even more importantly, making something so good that people will pay for it again, again and again.
What is a Good Bagel
In my humble opinion (which is backed up by enthusiastic fans of my bagels), a good bagel takes time and effort. First there is the starter. Then the next day, there is the mixing, kneading and forming. After proofing and then cooling over night, it is time to boil those toroids. After boiling, toppings are added, if desired, and then it is into the oven. The boiling is key to the texture of the crust and the mouth-feel of the crumb. If they are not boiled first, then they are really not bagels and are just round pieces of bread.

The Goal
The quickest, most efficient way to achieve The Idea is by setting up a bagel food cart. My goal is to acquire a trailer that will be custom modified for forming, cooling, boiling, baking, and selling lots of yummy bagels. My hope is to locate the cart in the Brooklyn Neighborhood of SE Portland, close to my home of 18 years and, more importantly, convenient for feeding the heavy morning commute traffic on Milwaukie Avenue.

With the help of Kickstarter.com, I am raising the money to achieve The Idea. This fund-raising campaign will last for only 30 days, so I ask you to forward the URL of this site to anyone you think would be supportive of my endeavor and, of course, to anyone in the Portland area who's a fan of good bagels. Awards listed to the right for varying levels of giving. There are even rewards for small donations. When I reach my fundraising goal, the rewards will spill forth. And yes, I'll even overnight ship bagels for those of you not in the Portland area.
