We're Cheese & Crack. We're a Cheese, Crackers, & Charcuterie Food Cart coming to Portland, Oregon Summer 2012.

The Menu

Customers get to create their own box choosing from our crackers, cheeses, charcuterie, accoutrements, and then a list of optional options with honeys, mustards, and chocolate. It's like a fancy charcuterie or cheese plate in a box to-go. Of course, there are completely gluten-free and vegan options. 

There's even scratch and sniff aromatic herbs on each box to complete a full-senses experience. 

We're going to be a little mobile marketplace with options for kids, party platters, and even arrangements from a local florist for sale. Oh, and there's lunch for our four-legged canine friends as well. 

For beverages we will have hand-stirred bitters and soda concoctions with both sweet and dry options. And what would a Pacific Northwest establishment be without a little local roasted coffee.

How We're Doing It

We're making the crackers from scratch and sourcing the cheese, charcuterie, and all the accoutrements from purveyors as local as we could find. Crackers baked fresh throughout the week with meat and cheese sliced daily. 

We will be working close with local farmers to keep it fresh and seasonal. Pickling veggies when they're at their best. Getting the best and freshest berries for jams. 

Why We're Doing It

We love playing with our food. We want every box to be custom tailored to every customer's palate to give them the culinarily artistic freedom to mix and match and spread and dollop and stack and bite. We want to be an unexpected go-to spot in Downtown Portland where you always get more than you expected and surprises are aplenty. My puppet, Norma Lee, might even pop out to visit when you stop by. 

What We'll Do With Your Money

We're building the cart now, which has already been paid for with a small business loan. What your pledge will go towards is the final supplies, the little things, like brooms, pots and pans, inventory, and the like that can really become costly. 

Technicalities 

We are planning to open June 2012 at a temporary East Portland location while we wait on the list with a slew of Thai and taco trucks vying for a spot in Downtown Portland at SW 10th and Alder. But as we are a versatile mobile food vendor location may change.
