The plan is to convert an old English double-decker bus into an eat-in restaurant, which serves crepes made from local produce.
Part 1: I once saw a coffee shop in Asheville, North Carolina that was established inside a double-decker bus and I remember the first impression it gave me. Now this restaurant in North Carolina was stationary and sat a bit out of the way, serving only pastries and coffee, but it immediately caught my interest as a terrific idea. I began to think, what if I could find a double-decker bus and put a full kitchen inside it? As the wheels turned, making Albuquerque’s first bustaurant and the LLC Estas Local started to become reality.
Part 2: After spending six months during 2010 and 2011 studying Spanish and volunteering in a rural elementary school outside of Granada, Nicaragua, my creative side took hold of me. As I watched and observed the relaxed Nicaraguan life style, I became very interested in the food. I watched as others cooked and asked them about the ingredients and process. I also noted the ability of a family to set out a grill in the street, cook food, and sell it to the people passing by. This experience got me seriously thinking about how much I enjoy cooking and interacting with those around me.
Part 3: Molly's Crepe Escape is a local crepe business located in northern New Mexico in the town of Taos. This information is key because I have had the chance to work with this business and learn how to make delicious crepes, as they do in France. From the background shared up until now, Estas Local started to take shape, and the idea quickly evolved into establishing a mobile bustaurant that would serve up crepes both savory and sweet. The double-decker bustaurant would only offer 6 to 9 staple menu options a day, but would provide an extremely unique dining setting to Albuquerque. By not having a huge menu, Estas local can buy produce from local coop’s and farmers, therefore supporting the local economy.
Part 4: The goals for the next two to five years include: being the top rated bustaurant/ food truck in the city of Albuquerque and establishing relationships with a variety of local organizations from farmers markets, crafts fairs, and coops to other business owner networks. I intend to set up an interactive webpage with access to social media networks to provide users with discounts, as well as information on what is happening in the metro area. Additionally, I'd set up space for local artists to display their art work outside the front of the bus, further connecting with local entrepreneurs and workers. I would also like to create T-shirts with the restaurant's logo, displaying passion for the New Mexican economy.
Part 5: How can I do this??? Well I need the help of the community first and foremost! Any and every donation goes a long way in helping me obtain the bus, make necessary remodels and purchase kitchen equipment.
