Thanks for all the feedback! We may just narrow our brand down yet.
We definitely intend to make full use of all the Seattle area has to offer for our fillings. Salmon might be the next recipe to work on.
We'll leave the pastie making to England. We do like the idea of sausage rolls, but haven't had a chance to test out too many yet. A pie floater is intriguing. Not sure how we'd serve it as a to go type food. I've heard of mushy peas as part of the filling for a similar concept. We should try that!

"Australian and New Zealand pies" doesn't really roll off the tongue. If you wanted to be inclusive of the two countries then you could try "Anzac pies". That's something both countries would identify positively with.
In terms of pasties, do you actually intend to sell those as well as pies? How about sausage rolls?
And the big question... how about pie floaters? That's a traditional dish for pie carts or pie trucks to serve in Australia. I expect it might be an acquired taste though.

If they're made in Seattle they should be called Seattle Pies, or PN Pies (Pacific Northwest, PN pronounced PiN). This is especially advantageous as it frees you up for all kinds of new pies that aren't native to Australia or England, like a smoked salmon pie, a pulled pork pie, a curry pie, a Thai pie, a Jamaican pie, a Central American pie, a Brazil pie, and so on. While serving the traditional basics (which I'm really looking forward to) you'll have the freedom to experiment and come up with your own regional creations.

Who knows, someday someone in Australia might open a Seattle Pie Truck to introduce the locals to the exotic flavors of the pacific northwest.

Well considering the New Zealand and Australian communities are probably pretty small around these parts, calling them Cornwall and Devon pastries would probably only incite like a 1 or 2 person riot ;). I vote calling them by their native names. Though I'm neither from Australia or New Zealand, so take that for what is it haha.
I'm definitely interested in going to your Skelly and the Bean cooking event too. Looking forward to the update for that.
