Proposal for investment in a “r-evolving” restaurant space.
This restaurant will be located within the heart of New Haven, Connecticut and will market to the savvy food connoisseur. (
The term “r-evolving”loosely describes the establishment’s evolution as a full-service restaurant that hosts guest chefs, each for a 3-6 month period, while maintaining a standard expectation of service, location and price point.
Each guest chef will be hand-selected from an applicant pool of experienced sous chefs. Each chosen sous chef will accepted the responsibility of executive chef during the agreed upon time period.
Each chosen applicant is required to take a sabbatical, or is currently unemployed, from current position and will sign on as a consultant- under the title/role executive chef.
The proposed establishment will boast a fully operational kitchen, fully furnished restaurant, managed staff and a general manager who will also serve as director of food and beverage.
The concept of “r-evolving” restaurant is born from an idea to provide talented individuals an opportunity to showcase his or her talents, all while utilizing a currently vacant or failing restaurant to benefit the community and bring life back to a lifeless space.

The launch of OES started off with a bang and the business hasn’t slowed since. Within the first three months, Our Empty Space welcomed Chloe Drimal and Camille Chambers, both Yale undergrads and both the brainchildren behind OES’s most successful pop-up, The Tacky Christmas Sweater Shop. These two ladies continually bring enthusiasm, creativity, humor, and, of course, hundreds of Facebook-friends to OES, and are surely the source for each pop-ups’ success.
Six months into Our Empty Space, our team hosted several successful temporary-storefronts, multi-day/week events, weddings, social events and a small chocolate café. Each OES project, hosted/opened within a New Haven empty storefront; all of which suggest the sustainability of Our Empty Space as a company; furthermore, the need for a company wholly dedicated to bringing life back to vacant storefronts. Spawned from OES’s to-date-success and the continued innovation of the OES team comes our next challenge: [Blank], the first r-evolving restaurant.
Currently, OES has launched its first Kickstarter campaign and is actively pursuing the purchase, development and execution of a full service restaurant within New Haven, CT, that will provide sous chefs an opportunity to showcase their talents during a 3 month period.
