When you think of really great coffee you think of South America, Italy, Hawaii (Kona is a fine bean). Something that is catching like wild fire in New York City is a Japanese method of brewing Kohii (Coffee).
Japan imports more coffee than France and has a history with coffee that spans almost 90 years! There is a science behind it, steeped in tradition as most things are in Japan. It involves a slow method of brewing the coffee through an very narrow cone shaped filter. The filter is designed specifically for this purpose without any seams (as they feel that the grounds that catch on the seam can become over saturated and give bitter tones to your cup).
I have to say that I've been a coffee lover for many many years. I have never in my life had a better cup of coffee (even out of the expensive automatic coffee centers you can find from places like Jura Capresso).
My family and I have wanted to put together a coffee shop for quite a long time. All of our children are 'grown up' and we have all decided it would be really cool to get together and help make this coffee shop a reality and get it off the ground. That said, we have 2 sons (age 24 and 20), and 3 Daughters (Age 23, 22, and 19). We also have a 1 year old grandson that likes to steal coffee from any cup that is left alone for more than 10 seconds!! They are all willing to pitch in and get the day to day work done.
What I am going to use the funds for:
The build out :) To pull this off I need to have a pretty nice build out. That doesn't mean I need a million bucks though. I have the honor of having some seriously talented friends who are willing to help me with the gift of their time, labor and skill sets. So the funds are going to be used to purchase additional materials to really "Set the place off".
The details are the most important part of a themed food venue. While we will not be offering a lot of food our Japanese brewing technique makes for a great theme potential. So creating that perfect relaxed, peaceful Japanese themed environment is going to be one of the line items for this build out.
I'll deliver to businesses, and serve a great cup to anyone that walks in. Great pastries, cookies, brownies and free wi-fi will be ready for all those who come in.
***NOTE: We just found out that Fox Vally Metro is requiring us to put in a Grease Trap which will increase our cost for this buildout about $2,500.

Well the Water Reclamation entity for our area (Fox Valley Metro) says that you need a grease trap for a coffee only shop because there is "oil" in coffee from the beans, and too man shops are adding things like sandwiches, soup pots, and what not as an add-on. The good news is... now we can add things like soup, sandwiches, and other goodies :)
The grease trap is a device that is designed to separate oil from the waste water that is poured down the drains. It helps keep the oil out of the waste water, and apparently the water reclamation people take that water and filter it/repurpose it. Can't fault them for that I guess!
