Rachel's Delectables started word of mouth in 2006.  In 2011, I decided to seriously pursue cheesecake making as my primary business.  Since the official date of 7/8/2011, my business has taken off running.  Almost every store, shop and individual who taste the product has become a customer.  Now I have the opportunity for my product to be in a chain with 29 stores in the Southeast.  Another nationwide chain will be meeting with me soon, this chain has over 100 stores, so as you can see, things have the potential to expand exponentially, suddenly. 

In addition to having my product in stop notch gourmet and specialty food stores, I have marketed heavily to event and wedding planners in the area and since the Asheville area is a busy place for events and destination weddings, I have the potential to be extremely busy with that as well.  So I will need to hire staff and also change my current working status in the near future.  I am employed full time as a paralegal in Asheville, NC.  In order to fulfill orders for my business, I generally work nights and weekends.  When I work nights, most of the time, I end up committing the entire night to the business, which in theory is not a problem because I absolutely love every minute of working in my business.  However, sleep deprivation and my day job are not a happy marriage.

Additionally, we are working on becoming Gluten Free certified.  We offer regular and gluten free products.
