The Pig Cave LLC was formed out of a desire to produce a product of the highest quality, unapologetic to the true flavors of the ingredients. The Pig Cave Black Mustard is bold, spicy, and intense.
The original Pig Cave was an “underground” endeavor to learn more about charcuterie and the flavors lost to commercialization. As the meats progressively became better, the need for a condiment as unique as the meats themselves presented itself. The Pig Cave Black Mustard was the answer.
The company was started about a year ago. While working for The Greenbrier the company has started to evolve. Black mustard has been introduced to some of the most celebrated chef's in America and has gotten rave reviews. Orders are on hold while the finishing paper work is completed.

The Pig Cave Black Mustard is the start of a larger project; to evolve into a hand crafted salumi operation creating unique charcuterie. We already make unique salumi for the resort, but want to share it with a much broader market. We believe that The Pig Cave Black Mustard will be the vehicle to that success.

While convention would say that the Black Mustard would mask the subtle flavor of salumi, it actually intertwines with it and speaks to a time when cured pig was good… salumi “raw”… and if you had a little wine to go with it, heaven was touchable.
The Pig Cave Black Mustard is the entry into a world of the unique flavors of original cuisine. We are starting with one condiment that will appeal to afficiandos of cured pig. This is the first step... the next step to follow entails (get it) salty fermented sometimes moldy (in a good way) pig pieces. In other words... artisan SALUMI.
