We’re cooking up a fresh food training program. Sioux Chef will develop a cookbook and culinary curriculum with the Santee Sioux Nation. In places like Santee, Nebraska, processed foods are all there’s been for decades. We’ll cook through a season of new fresh produce to create healthy, affordable, tasty, and simple recipes. With your help, Sioux Chef will provide the cooking knowledge that lets people reclaim fresh foods and healthy diets.
Sioux Chef will create:
- Cookbook and Fresh Food Guide -- recipes, garden-to-table tips, and nutrition information to use healthy, local produce
- Ten “Cooking 101” Demonstrations and Dinners -- tips and techniques from professional kitchens for simple, delicious meals
- Map to Food Sovereignty -- sharing steps the Santee Sioux Nation of Nebraska is taking to reclaim healthy, local food
With your support, we'll develop a training program that shows how easy and delicious it is to cook with fresh foods.
Sioux Chef will develop innovative lessons and recipes that use local garden and market ingredients. We’ll keep things practical and budget-friendly. Sioux Chef’s fresh food introduction will be accessible for everyone, including many who grew up with only processed foods. Sioux Chef will teach the cooking skills needed to bring fresh, healthy foods within reach.

In a restaurant kitchen, the sous (pronounced “soo”) chef is often responsible for bringing dishes from ideas to reality. Our resources will help make fresh foods a reality in the diets of every new “Sioux Chef.”The Center for Rural Affairs is a 501(c)(3) nonprofit. When the Sioux Chef project reaches its funding goal, your pledge becomes a tax-deductible donation. Along with your reward, we'll send you a thank-you note and an electronic subscription to our monthly electronic newsletter.
