A Cajun Life, LLC is a company with a vision of bringing great tasting authentic Cajun food to American homes. Having moved from Louisiana and traveling across the US regularly, I came to realize that the one thing I missed most about my home state was the food. Restaurants and packaged goods companies across the US claim to serve authentic Cajun Food but none came close to the real thing. A Cajun Life plans to change that!

The plan is to start as a Food Cart located in the greater Portland area serving a limited menu, then use the funds generated by the cart to fund manufacturing time and packaging costs to get those menu items into production and reform the company as a proper Consumer Goods company. This would allow the items to be sold in stores nationwide. The funds generated by this campaign will provide the necessary means to purchase the remaining items needed to start the cart (Provided you all dont launch me directly into the manufacturing stage!) in early May. Those items are mostly initial supplies and some equipment. Long term, I envision A Cajun Life as a household brand by expanding into kitchenware and other business segments that are a good fit for the overall brand.

During my time traveling and living in multiple locations with varying circles of friends, I have cooked many of my dishes for them and their guests. As a result, I was able to confirm that consumers outside southern Louisiana (and some within) are blown away by the amazing flavors a Cajun dish brings compared to other options. This fact coupled with the seemingly nationwide celebrity that reality TV is bringing to the Cajun Culture (good timing) will only help fuel the success of this venture.

The Food

We plan to start with a simple but authentic menu that includes ingredients that can only be found in Louisiana.

Authentic Cajun Gumbo  - Slow cooked for a minimum of 2 hours to ensure all flavors are fully mature and are ready to attack your taste buds!

Chicken Sausage and Tasso - I assure you, you've never had anything like this dish (unless you've been to the heart of Cajun Country). See video for a quick view of a plated version.

Crawfish Étouffée - Thats right.. Crawfish! Dont confuse this one with its Creole counterpart.. its a true Cajun dish.

Crawfish Pistolettes - Crawfish cheese sauce stuffed in french rolls. Is your mouth watering yet?
