Tasty High Protein Snacks: Grass-fed beef jerky, salmon candy, and smoked pork loin hand made in Montana and Alaska

We're running this Kickstarter campaign to bring the tastiest and healthiest, preservative-free grass-fed beef jerky, salmon candy, and smoked pork loin to a larger audience. All of our animals are pasture-raised on very high quality food sources (no soy, no corn, no GMOs) that results in the best tasting preserved meats.
At the Bos Creek, we’re just a couple of guys who really get excited about great food and great meat. Bacon, steaks, sushi, roast chicken, it doesn't matter what we're about to eat, as long as we have fresh ingredients, the meat comes from animals raised the right way, and the dishes are cooked to perfection. We’ve spent the past year focused on bringing everyone the best quality pork, chicken, and beef at theboslife.com, but we understand that the best time to eat a steak might not be 10:30 in the morning. Now, we have a solution to that problem. We're using this Kickstarter campaign to bring our salmon candy, smoked pork loin, and wet-aged beef jerky nationwide.
The last time we were out on the Montana ranch getting our equipment ready to fly fish, our team's operations man, Travis, reached into his ice chest and took out some meat treats he had been working on. He didn’t say much. Instead, he cut off portions for each of us to try and let the meat speak for itself. Travis gave us smoked salmon candy, smoked pork loin, and the best beef jerky any of us had ever had. The whole experience was incredible. There we were overlooking a beautiful landscape covered in green grass, beautiful evergreens, and tall snow capped mountains against the big, blue Montana sky, while eating delicious treats raised on the land in front of us. We knew we had to share this experience.
Now here’s some more information about each of the snacks.
This smoked salmon is a healthy and pure-protein energy explosion. It is full of omega-3 fatty acids and is a great heart-healthy snack. The process starts with sustainably caught, wild Alaskan Coho Salmon marinating in a special brine of juices and spices for 48 hours. After the brine, the salmon is dried for 24 hours and hot smoked over natural hickory wood for a texture and flavor profile that will keep you wanting more.
The pork starts out on a small family farm tucked into a valley in southwestern Montana surrounded by majestic mountains soaring up to 10,000 feet above sea level. The air and water where the pigs are allowed to roam is clean and pure. The pigs wander around the pasture and head to shelter when they want to. The boneless pork loins are smoked fresh and chilled for two days. After the loins are chilled, a master butcher hand cuts the loins into boneless chops, rubs them with Travis' signature S&S (sweet and spicy) rub, and pan sears them to caramelize the rub. We never knew smoked loins could taste this good.

This is the best jerky you will ever eat! Our wet-aged beef jerky comes from the beautiful Black Angus steers in our video and the picture above. The cows have all the freedom they want to graze in the lush grass below the Beartooth Mountain Range. In order to make the best jerky, we start with a cut of meat that is better than what most jerky producers use-- flank steak. We decided to use flank steak, because it retained the most flavor and had the best texture. To achieve a great flavor, we use a subtle blend of sweet and spicy to create a lasting flavor that leaves you wanting more. After the 72 hour brine in a variety of spices the flank strips are then smoked and ready to enjoy.
Why do we wet age all of our meat? We want to keep our products as close to their natural state as possible. This means no preservatives like MSG, nitrates and nitrites, and other preservative that are typically found in other jerkies. Additionally, wet-aging meats ensures the flavor profile of each snack, leaving our meat rich and more tender than dry-preserved meats.
Once the food shock wore off, we started getting down to business about what it would take to make these high protein snacks readily available. Travis has the capacity to produce large quantities, but he needs more raw product from Derek to make all of these snacks. Luckily, our suppliers have more than enough cattle, salmon, and pigs to allow Bos Creek to offer this in a commercial quantity. So it's on us (Glenn and Ken) to take this food from the farms to your table. We need your help to make this possible.
Our $10,000 goal will help Travis and the rest of our team in Montana get enough supplies to fulfill a large order, to the tune of thousands of pounds. Your contribution will help fund the further development of our E-commerce website, switch to eco-friendly packaging, build our Youtube channel with Chef Erik Sun, and execute our marketing plan which includes another informative video, search engine optimization (SEO) and advertising. The Bos Creek Ranch Trip
To show that we are truly committed to connecting your to your food, we are offering a trip to the ranch to get a first-hand look at what goes in to raising sustainable cattle. You'll see soaring mountains, the green grass where the animals graze, and rivers teeming with fish. You'll also learn the history behind the ranch and how Derek's great-grandfather settled the homestead. Chef Erik Sun will prepare a multi-course dinner that will give you plenty of time to ask any questions about our company, vision, and processes. There will be opportunities to fly fish, horseback ride, and explore the ranch on horseback. You'll be staying in a ranch house that's been on the land for nearly a hundred years but has been updated with all the modern amenities. We hope to see you there!
Risks and challenges Learn about accountability on Kickstarter
Like any Kickstarter food project, we have some risks in the logistical, taste, and price department. If recent Kickstarters are any indication, jerky and other cured meats are very popular, so we are making sure that we are prepared for a large demand. We successfully run the Bos Life, a monthly subscription service for artisan meat, with a growing subscription base of nearly a hundred boxes a month. We successfully manage the logistics that go along with that business including sourcing, processing, and shipping large quantities of meats. Dried meats are slightly different, but we feel our prior experiences really set us up to handle this.
Travis is also ready to produce. As owner of Montana Fish and Game Company for over ten years, Travis knows what it takes to successfully handle demand and put in the hours to make something successful. Our meat suppliers are already aware of the potential demand we might face and can handle orders in that could produce TONS (the actual unit of weight, not a hyperbole) of these preserved meats. One big thing we struggled with early on was finding a producer who raised animals the right way AND tasted good AND could grow with us as we grew. We found them.
We understand here that you might be concerned with how we can be so confident you will enjoy how our preserved meats taste. We have this confidence because our head chef Erik Sun, check out his blog here, www.thepursuitoffood.com, wouldn’t let us sell anything unless it passes his taste test. If the success of Bestia, the Zagat-voted best new restaurant in LA where he is a partner, is any indication of how good his taste is, then we are in good hands.
We have spent the time to source everything from the stickers to the meat to the spices to the equipment before we click “Go” on this Kickstarter campaign. As we have more demand we will be able to offer the product at a lower price, but since we are small and just starting out, we have done as best we can to source our ingredients at the cheapest possible price while not compromising at all on our unique ingredient qualities. Travis already has a relationship with a USDA certified facility that is able to "meat" our ingredient needs and produce these goods the way we want them to be made. The only thing we are waiting for is you to help back us.
