We are Hill Country Pierogi - Austin's first and only food truck dedicated to the art of handmade Polish Dumplings.  Since our arrival on the Austin food truck scene in October 2011, we have had the pleasure of introducing Texans to a new favorite food and bringing childhood memories flooding back to Austin transplants.

People have been coming from far and near to try our handmade Polish food and we continually get rave reviews.  We strive to use as many locally produced, artisanal ingredients as possible. Pierogi Lovers, foodies and locals have welcomed us with open arms! Now we are asking for your help to see our dream be all that it can be.

The goal of our campaign is to raise money to help us move into retail sales, as well as expand and continue daily operations in a more efficient manner. 

In order for pierogi making to continue at the level necessary to meet demand, we are in desperate need of a dough sheeter.  This one piece of machinery will cut down the time needed to make pierogi by 80% and open up an entirely untapped source of revenue - retail sales. 

Right now, it takes Rob 20-25 minutes to roll out a ball of dough by hand.  A dough sheeter will do the same job in less than two minutes.  This will immediately allow us to do two things 1) keep all pierogi varieties in stock at the truck at all times and 2) allow us to have all pierogi varieties available at the truck for retail sales.  

About halfway down this page on the left is a video of the dough sheeter we require. You can see for yourself how quick and efficient this is.  Our pierogi and pierogi dough would continue to be handmade, this machine simply rolls the dough out to the correct thickness.

From the very beginnings of our food truck journey, we knew we had a unique advantage to our product - pierogi can be frozen and sold for customers to take home and make themselves.  This allows for us to approach local retail outlets such as Royal Blue Grocery, Whip-In, Wheatsville Co-Op, Thom's Market and even HEB and Whole Foods.  We have seen this approach work perfectly with Mmmpanadas and would like to follow in their footsteps.

Marketing our pierogi on a large scale will require labels, packaging, licensing and investment in initial product.

Another opportunity that would be opened up by procuring a dough sheeter and stepping up production is being a Farmers Market vendor.  Our pierogi are handmade, from scratch and we use locally sourced, organic ingredients.  We would love to set up a booth, give out samples and have frozen pierogi available for customers to take home.

Lastly, our truck's only commercial refrigerator is at capacity and has a broken thermostat that causes it to freeze up and leak water everywhere.  In order to survive the hot Texas summer, we very much need to repair it and/or purchase a second fridge.
