How it all began...

In Colombia, salsa is called "aji" (ah-he) and the legendary story of Mama Rosa's salsa begins in a small pueblo in Central Colombia known for producing the finest emeralds in the world. Nestled in a narrow valley where the Andes Mountains split into two separate ranges lies a fertile agricultural region where you can practically drop a seed anywhere in the nurturing soil and it will produce an abundant bounty in record time.

Farmers from the entire region come to the Plaza located in the middle of the pueblo each Wednesday to display their wonderful goods. That's where Mama Rosa can be found in the early morning as the sun peaks over the Church Bell Tower and casts its light on the cornucopia of fresh produce.

Mama Rosa carefully hand selects only the freshest and finest ingredients to make it into her basket and eventually into her renowned salsa.

Neighbors and family members soon show up at the Casa de Mama Rosa to offer a helping hand in preparing the outdoor fire to roast the chiles as well as making sure that each ingredient is hand washed and sun dried before making its way, in due time, into its final home... a grande cast iron pot.

As the fire heats up, a medley of delicate aromas fills the air of the meandering streets of the Pueblo, alerting everyone that Mama Rosa's "Salsa de Amor" will soon be available. A line of town folk soon forms in front of la Casa de Mama Rosa to ensure that their week's supply of the legendary elixr will make it into their pantry.

Psssst.... rumor has it that many a happy marriage has begun and even a territorial dispute or two has been settled as a result of the love delivered in each jar of Mama Rosa's Salsa de Amor! =)

Where we are today...

Mama Rosa's youngest daughter, Miryan (my lovely wife), has continued the family tradition here stateside by creating Mama Rosa's Salsa Emporium, a collection of unique blends of fresh organic ingredients that she hand selects each week and painstakingly prepares in the same way that her mother, Mama Rosa, taught her.

The result...

Three exotic creations that have proven to please the whole family.

Salsa de Amor - the original renowned Mama Rosa's red salsa that put us "on the map". A delicious mild red salsa that's perfect for any occasion!

Salsa Esmeralda - a light bodied salsa verde the color of the finest emeralds... with a delicate citrus taste!

Habanero Hottie - for those needing a little fire down below =) Made with a balanced blend of sun dried habanero peppers and our "top secret" ingredient!

*LIMITED QUANTITY (for pledges of $100 or more) - a sampling of our seasonal specialty salsa "Pango"... a delightfully light and zesty combination of fresh ripened mango and Colorado pine nuts that are only available for harvest each 5-7 years!

With YOUR help...

We've dedicated countless hours perfecting Mama Rosa's salsa recipes and have now gained quite a bit of recognition and demand for our salsas has outgrown our ability to keep up with our current output.

Bottom line is... your generous backing today will help us move towards leasing a small commercial kitchen space (we've already secured the necessary permits and licensing requiring for such an endeavor) as well as the purchase of additional kitchen equipment and:

• Food production costs and manufacturing overhead
• Commercial kitchen rental and additional related equipment
• Jars, labeling and packaging materials
• Food storage items
• Packing and shipping costs

Each pledge from backers will take us closer to reaching those goals and allow us to focus the majority of our time on the most important task - actually creating our hand crafted specialty salsas!

By the way, we've already been in contact with several distributors considering working with us as well as a few tourist "hotspots" but we obviously need to have everything in place to be able to fulfill larger quantities of orders.
