About this project

Hi, I am Nicole and I am a baker. In NYC in 2005 I fell in love with my then band mate, now husband. He was from a place I had never been, Richmond, VA.. The band went on a mini tour and RVA was the 2nd stop... Turns out I fell in love with RVA that year too!

Since then it has been a dream of mine to move down here and make desserts. I now have the chance to take it to the next level with DOLLOP DESSERTS.

DOLLOP  makes hand crafted, small batch, modern classic desserts that honor the past and celebrate the present. I use the best quality ingredients I can find. REAL BUTTER, REAL VANILLA BEAN and EXTRACTS, UNBLEACHED FLOUR, HOMEMADE SYRUPS- stuff like that. I don't use artificial ingredients, it's gross!  I want to help our community thrive so I plan on seeking out LOCAL vendors, distributors, farmers and suppliers whenever possible. I am invested in our community (with plans to give back to it, see video).........and I want to make it's desserts!

THE PLAN !  I have just acquired a tiny little commercial kitchen, but there is still a lot of stuff to do and purchase. It's a lot of start up costs to get to where I need to be, but it's not anything I cannot achieve with help from people like you! (Hey, you're a people like you, right?). The plan is to make desserts and sell them both retail and wholesale and also through our city's fabulous Farmers Markets.   I hope to offer a "CSD"- COMMUNITY SUPPORTED DESSERTS program as well. Like a CSA but with sweets! . Once I can get started I have some fabulous NATURAL desserts that will make you get up and shout! And EAT!  They are TRULY hand crafted- hand piped, rolled, cut, etc, by me.  Let me tell you about them:

WHOOPIE PIES!  They are from the North like me and are best described as a cake sandwich. Cake outsides and frosting inside. This seasons flavors include: Pumpkin, Gingerbread, Chocolate and Peppermint to name a few.

CAKES!  Goodness gracious if I can't make a cake. Here are some I have made in the last year that I hope will be in the Dollop repertoire: Sweet Potato w Rum Buttercream, Freshly Squeezed (lemon on lemon on lemon), Queen of Sheba (Pistachio cake with Honey Buttercream,) Scout (think Thin Mints in cake form), Almond Everywhere (Almond, Chocolate, More Almond), Running with the Devil (Spicy Mexican Devils food cake)
AND SO MUCH MORE!!!!!

OTHER STUFF! I am constantly thinking about desserts. I have lots of ideas for future confections and snacks, but know that I need to focus on the right now -which means keeping it simple and growing organically, with my business.

WHAT YOUR MONEY WILL GO TO! Oh, so many things!  Here is just a short list of what your money will go directly toward:

Licenses,  inspection, certificates and application fees. (Dollop needs to be legit!)

A tent, table and refrigeration for the Farmers Markets (Buttercream & 90+ degree heat do not mix!)

Equipment and Supplies: commercial grade appliances, paper products, labels, packaging.

Ingredients! You have to have ingredients. (I'd like to eventually offer GLUTEN FREE  and VEGAN sweets as well)

All natural food dyes (yep, they exist, Dollop wants no part of RED #40.. and neither do you.)Food safe containers, shelving for dry storage, light bulbs you name it, I gotta buy it.

Kickstarter is all or nothing funding. If 80 people donate $40 dollars, I can achieve my goal and Dollop can be the best lil' dessert company it can be.YOU CAN PLEDGE ANY AMOUNT YOU'D LIKE TO.
